So here goes.
Tonight was special even though we only had an hour to help make and eat dinner. Hubby pulled out the raclette grill after 8 months or so in the box. Beforehand, he lightly steamed Brussels sprouts (really - they were amazing), potatoes and asparagus, then sliced onions and a yellow pepper, chopped some day-old focaccia bread, and put out baby pickles (sounds strange but a family favorite), and some Light Life Chick'n strips. We sat down and each threw a chunk of cheese on our individual melting grills, a bit of olive oil on the big grill on top and threw on veggies and bread. It was amazing. To finish, we grilled some fresh pineapple and a few of us put a slice of chocolate on top.
Hubby and I had a small glass of Boulder Creek Viognier with the dinner. It was a tad sweeter than the preferred Chardonnay, but it was what we had on hand and was nice.
All in all, a wonderfully satisfying and fun meal...
